Got this on sale for a great price. I bought five of them. I made four batches of wine using slightly less water and distributing extra concentrate from the fifth box to the other four. This really improved the sugar content as well as improving the body of the wine. I added grape stems to the fermenter as well as oak chips that I purchased separately to increase the tannins. The wine is in carboys now for secondary fermentation. So far it is looking promising, but it will be months before I can taste the product.
I assume that after bottling the wine it is ready to drink. Is there any benefit from bottle aging this wine?
Yes I have found that several months of aging improves the flavor. This may vary depending on a variety of factors. Why not save a few bottles try them later and see what happens.
Yes a few weeks after bottling the wine is ready to drink. There is not much difference between 2week after bottling or 6 months
The wine is very young if you drink it right away. I try not to consume it for 6 months. I keep it in a dark and cool spot in the cellar. I have kept it for up to a year and it does age nicely.
Tim Actually the wine is very drinkable and there is a growing number of people who like the freshness of young wine. On the other hand if you age it for 9 months or more it mellows and gets smoother. If you're going to age it be sure to add a 1/4 tsp of Potassium Metabisulfite before you bottle it to preserve it. You can certainly drink the wine right after bottling. We always open one to celebrate. It the wine (any wine) will benefit from a little age. It will mellow and develop deeper flavors.
The wine I made from this kit definitely improved with 3-6 months in the bottle. I was thinking the same way you do and drank a lot of it as soon as it was bottled. That was a mistake. The wine improved greatly with a few months aging in the bottle drinking well above its price point and I ended up feeling stupid for drinking most of it too young. I thought this wine was fantastic! Incidentally the grape concentrate dilution I used was only 80 percent of what was called for in the instructions making a much more full-bodied wine. In my opinion the idea that you can make good wine from a kit in a matter of 4-6 weeks is hogwash. Every batch I have made tastes green as hell at those young ages. Six months seems to be a sweet spot.
My friends and I have been happy with the wine shortly after bottling. Mine never ages more than 3-4 months since that is when I hit the last bottle.
Bu two kits; one to drink young and one to put in the cellar they always improvve!
I let it age 6-12 months for it to settle down and come into it’s own. Too soon and and you could try it in the “dumb” zone where it has no taste. The time on the box is the soonest you can bottle but not drink. The low alcohol fruit wine can be enjoyed right after bottling because of the all the sweetness from the flavor pack.
