First Mead after over a decade of homebrewing. This mead turned out amazing in Still and Sparking forms (served through my kegerator). Fresh, floral aromatics (with subtle tropical fruit under tones) finished super dry .995, but maintained a nice mouthfeel and great balance with no water adjustments (clean, soft, Pacific Northwest water). Cold crashing and racking produced a very clear product.Produced a bit of sulphur for me fermented at ~65F, wether because of too little nutrient or maybe too little de-gassing I'm not sure. Took a good 3-4 weeks to age out, but was enjoying this one in 5 weeks and was really exceptional at 8 weeks and beyond. Will definitely make this one again.
