    Viking Pilsner Zero Malt is made from 2-row null-LOX spring barley. As a special feature in null-LOX varieties is that Lipoxygenase activity is zero, affecting positively on flavor stability of beer. Steeping and germination conditions are chosen to promote even germination and homogenous modification. The final air-on temperature in kilning is typically 80–85°C.

        Pilsner Zero

        I'd taken a break from home brewing, about 2 years, and I ordered this malt to make a Fest bier, the second beer after my long break. The Fest bier is still lagering but finished at 1.010 as expected and the samples taste great. Next, I used this in a SN Pale Ale clone, great extraction, better than calculated, and ended up with a > 6% ABV beer. Next, an Irish Red, again the extraction exceeded the recipe calculation. My setup is the same, but with this malt, my efficiency has gone up. I like this malt, it looks good, smells good, tastes good, and has great extraction for me. I ordered and just received a 50lbs of Viking Pale Ale malt, I'm excited to try the pale malt after my positive experience with the pils malt. This malt is a great value based on my brews so far.
