French Oak Cubes (Stavin) - Medium Plus Toast

    Description

Premium, Fire-Toasted Oak Cubes from Stavin

Medium + Toast French Oak will impart flavors of vanilla, cinnamon and chocolate with notes of coffee and campfire.

These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes.

The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional.

Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry.

Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel.

        Great Flavor

I use these during bottling. In my Stout I found that 3 cubes per 22oz tastes real nice after a few weeks of conditioning. I also have soaked them in whisky which turned out very good. Another fun way to play with your beer recipes!

Superb Addition To A Special Beer

Excellent product to use in a secondary fermenter, still experimenting with contact times. Easy to use.

Bourbon Brown Porter using Medium French Oak Cubes

I brewed a 10 gallon batch of Brown Porter and split it intotwo kegs. I added 2oz. of medium French Oak cubes which were soaked in 8oz. of Bulleit bourbon for two days, placed in a mesh bag, and then the bag of oak cubes and the rest of thebourbon were dropped into one of the kegs. The results were exceptional! Everyone who tasted this beer has been asking formore.

        Gives you wood...

I soak these in whiskey and add to RIS or big Barleywine style beers for a nice vanilla wood character. Have to be careful not to leave the beer on them too long, they have big flavor.

        You'll need this for

I brew a wide variety of beers and other fruit wines too, and for several styles you'll need oak cubes. The medium + toast is perfect for any ale you want to 'age' in the tank. But you won't need weeks, just add 1 OZ. of cubes to the tank and give it a week or two tops, and you'll be all set for five gallons of "cask conditioned" ale.... Cheers!
