Wyeast | 1272 American Ale II | Beer Yeast | Activator Smack-Pack System™ | 100 Billion Cells

    Description

    • 1272 is a reliable "house" strain for brewing American style beer with consistent performance
    • Provides a soft, clean profile with hints of nut, and a slightly tart finish
    • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
    • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism
    • Wyeast has been a pioneer in craft brewing for over 35 years and is committed to creating the finest fermentation products available
    • Although beneficial, cultures do not need to be activated prior to inoculation

With many of the best qualities that brewers look for when brewing American styles of beer, this strain’s performance is consistent and it makes great beer. This versatile strain is a very good choice for a “House” strain. Expect a soft, clean profile with hints of nut, and a slightly tart finish. Ferment at warmer temperatures to accentuate hop character with an increased fruitiness. Or, ferment cool for a clean, light citrus character. It attenuates well and is reliably flocculent, producing bright beer without filtration.

    Attenuation: 72-76%
    Flocculation: Medium High
    Alcohol Tolerance: 10%
    Optimum Fermentation Temp: 60-72°F
    Cell Count: 100 Billion

    Styles:
    American Amber Ale
    American Brown Ale
    American IPA
    American Pale Ale
    American Stout
    Blonde Ale
    Fruit Beer
    Imperial IPA
    Wood-Aged Beer

For best results we always recommend ordering an ice pack with your liquid yeast.

Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.

        Still Fermenting

Beer is fermenting (week 2.5 since I pitched the yeast) May have not oxygenated the wort enough but the OG was around 1.082. Shes heavy. Yeast is rolling like a champ no issues yet.

        Good fruity yeast

Great yeast fruity and slight tartness. I used it in the Galaxy Extra Pale and it is one of the best beer I have made. Definitely not as “clean” as Chico and the beer is a little hazy. So if you want a clean bright beer this is not the yeast for you. But if you want something slightly more fruity this is a great yeast.

        Fermented fast

Opened pack 3 days after receiving delivery in a ice pac. all melted but still quite cool and well insulated. I made a starter and let grow for 3 days at 70 degrees. Added it to my wort at 69 degrees and was fermenting the next morning. Mostly done after 5 days I racked the dry hops and most of the yeast off the bottom of the 27 gallon conical fermenter and will keg in a few days. All pretty fast. Now I hope it tastes wonderful!

        Good stuff

Love this yeast works in a ton of styles so good choice for a house strain. Blow off tube recommended this stuff likes to climb out of the fermenter. Easy to top crop

        Stuck fermentation

I do not know what caused the problem. I can't blame the yeast.

        Finishes clear

Used this in Ugly Fish IPA with and a full pack of Safale-05 (started with a high OG needed the extra cells). Best tasting brew I had ever produced. My friends thought I had something commercial on tap!

        New yeast for me

I haven't used this one before so I figured I would give it a try. I have been using 1056 for a while and I am not real happy with it. I have used a lot of different yeast and it always surprises me how much different the same recipe will turn out with different yeast. I can't wait to get this going.

        Clean

I love the activator packs, decreases the time until fermentation starts by a few hours or more. Nice attenuation, good floc for a clear beer.

        Smells great so far

Kind of slow to swell, give it 6-8 hours instead of the recommeded 3. Really clean and a steady worker - still going after two weeks and dry hopping.

        Clean and Flocculant

Nice clean American profile but it does settle out better than 1056. Worked great in a American Pale!

How much do I need to order for a 3bbl system?

        MoreBeer!

Hello Jeff - I would recommend at least 6 to direct pitch in a 3bbl batch this would also be dependent on OG Gravity. There is also the option of propagating your own yeast.
