My first smack pack. I beat this thing like a rented mule and the packet didn't deploy. Hit it HARD 5 times. It's been ~48 hours and it looks like the yeast is just waking up.
Perhaps I'm not destined to use smack packs....
Lets see how the yeast does going forward.
Used 4 other Kolsch yeasts and this one has been the best so far. Imperial Dieter is a close second. Clean, crisp lager like beer. Ferment low and slow, but still expect a blow off. 62 for 24 hours, then up to 65 to finish. Blow off every time
I wanted to compare this yeast to G03 Dieter.The same recipe was used for both beers. However, I did get more flavors from G03. Malty and refreshing with a hint of noble hops. The beer cleared extremely faster. And it fermented faster as well.Wyeast 2565 would be my second choice if Dieter is not available.
Used this yeast to make a clone of New Glarus Spotted Cow cream ale. Worked perfectly - didnt need to do a starter.
My favorite kolsch stain...Fermented fine low at 59F. Water profile seemed most similar to what I’ve drank in Köln
My homebrew club, the Southern Maine Homebrewers did a collaboration brew with Geary's Brewing Co. Portland and this was the perfect yeast for our 'authentic' Kölsch brew. The packets came on time, at the best price and the yeast was so fresh i easily made a 2 gallon starter for the 45 gallon batch. I recommend More Beer to anyone looking for the best price of home brew supplies.
My go to yeast for Kölsch
If you don't want to or can't ferment at 48 to 52 degrees, this yeast makes a great alternative. I have used it many, many times for pseudo lagers. Primary ferment at 60 to 65 and then lager as normal.
Received with a fresh packaging date. Made a healthy starter that took off immediately.
Very active yeast. It blew the cork out of my fermentor in the first 18 ish hours. Brew smelled wonderful when I checked it and found the cork out. Still to taset the brew. That is still a ways away.

Used for an American Wheat Ale fermented around 67F. Great fruity notes. Will definitely use again.

Don't really care if it doesn't flock out completely. It's got a great clean and wonderful taste and character for a true Kolsch yeast! I always try to have this now ready to go.
Much more representative of the Style as compared to German Ale / Kolsch option.
I brewed a Kolsch and used a starter of Wyeast 2565. This yeast performed well at 63 degrees during fermentation. I warmed it up to 68 to finish out and it cleaned up well. Nice flavor profile and I would use it again.
great kolsch flavor but wasn't happy with stubborn floc from strain.
This yeast is finicky: I normally need to pitch ~25% more than recommended by yeast calculators, complete a diacetyl rest, AND condition in the keg for a few weeks to produce a kolsch without fermentation off-flavors.But if you want Kolsch, you need to use Kolsch yeast.
I used this yeast a few months ago. My Kolsch turned out wonderfully. I got right to the bottom of keg number one before it got really good. Keg number two would have been even better but it appears I have a pedicoccus infection. Sour Kolsch anyone?
