Stop hop creep before it happens with ALDC from CellarScience. As modern beer styles call for increasing amounts of dry hops, a new risk for off-flavor in the finished beer arises. Hop creep is the result of yeast beginning a new fermentation when dry hops with trace amounts of fermentable sugars are introduced to the finished beer. This results in further production of Diacetyl and, if yeast are not given enough time to clean up after themselves, can lead to higher levels of Diacetyl in the finished beer. ALDC, or alpha acetolactate decarboxylase, is a helpful enzyme that can be added at yeast pitching or along with your dry hops to limit the production of Diacetyl to protect your finished beer from off-flavors and reduce the conditioning time needed before its ready to bottle or keg. Use: Available in 1 oz dropper bottle or 8 oz and 32 oz Bettix bottles.  Add to fermenter during yeast pitching or dry hopping at a rate of 1 dropperful per 5 gallons or 3 mL per bbl. 1 oz contains approximately 35 doses for 5-gallon batches (enough to treat approximately 10 bbl). Additional Notes: Although commonly added to heavily dry hopped beers, using ALDC during fermentation can benefit any beer style by reducing Diacetyl production. Brewing hops all contain the naturally occurring enzyme AMG or amyloglucosidase which breaks down long chain sugars into simple sugars that yeast can ferment. The reason hop creep is a relatively new phenomenon is due to the changing ways in which hops are dried and processed. As brewers started to demand more aromatics from their hops, growers began to lower the kilning temperatures to preserve volatile oils. This led to higher levels of AMG left on the hops as well, where they were previously denatured at the higher kilning temperatures. With more AMG present on the hops, dry hopping now leads to more fermentation activity and higher levels of Diacetyl produced after the primary fermentation is complete. Although the simplest remedy to hop creep is time—waiting for the yeast to naturally clean up the extra Diacetyl—ALDC is a great way to reduce conditioning time and the risk of off-flavors in your finished beer.     Distilled hop oil is an amazing new product we are making available to homebrewers.  Distilled hop oil varies from other oils in that it is produced from fresh hops, as opposed to dried and processed pellets.  Distilled hop oil delivers the same wet hop character that was previously only possible to acquire with the use of freshly harvested hops.  The oil is extremely shelf stable, so you can now brew a consistant fresh hop IPA all year long. Extremely volatile, this oil should only be used for aromatic applications; typically applied at bottling/kegging.   Distilled hop oil is very potent; add to taste. We recommend using roughly 0.5-1 ml per 5 gallon batch, if replacing 50-100% of a dry hop, added directly to the beer prior to bottling or during kegging. Be careful to not push off the volatile aromatic compounds (disturb the beer as little as possible and reduce oxygen exposure). Most staff members here found that 1ml per 5 gallons was "too hoppy" when replacing 100% of the dry hop.  Hop heads (myself included), found that the 1 ml per 5 gallon dosage gave a pungent, fresh, pleasurable and unique hop experience.  Tasting these oils is as close to being in Yakima for hop harvest as possible!

Alcohol Tolerance: 12-18% Optimum Fermentation Temp: 55-95°F Notes from Wyeast: Fresh liquid cultures of L. oenos ER1A and EY2D provide rapid and complete malic acid to lactic acid reduction to balance and soften wines. ER1A and EY2D perform well in conditions of low pH and cool cellaring. Typical conditions of high wine acidity can be improved by reducing the harsh, sharp malic acid in the wine to the softer and smoother lactic acid. Experimental lots of Chardonnay, Pinot Blanc, and Pinot Noir were inoculated at the end of yeast fermentation at 18°C with approximately 106 cfu/ml of Er1a, Ey2d, ML-34, PSU-1, MLT-kli, and BB44-40 Under low pH conditions, the Oregon strains completed MALOLACTIC fermentations (MLF) more rapidly than the other commercially available strains: at pH less than 3.3 Er1a completed MLF in an average of 48 days, Ey2d in 94 days, MLT-kli in 127 days, and the other strains in 143 days or longer. At pH greater than 3.4 all the strains completed MLF within 31 days. Commercial wines were inoculated during yeast fermentations with 0.5 to 2.0% V/V Er1a and Ey2d grape juice cultures (109 cfu/ml) and wine cultures (108 cfu/ml). Er1a completed MLF in 1-2 months at cellar temperatures of 15°C or higher, but was sensitive to cooler temperatures. Ey2d was more cold tolerant and completed MLF in 2-3 months at temperatures in 12-15°C In addition, Ey2d retained MALOLACTIC activity at temperatures as high as 80°C when all other strains including Er1a were inactive.
