488-563 °L - Viking Malt - Viking Black Malt is produced by roasting pilsner malt. Final temperature is more than 392˚F. The amylolytic activity of Black Malt is zero. The amount of fermentable extract is low. The flavor of Black Malt is harsh but less acrid than that of roasted barley. Burnt and smoky flavors are strong.
Black Malt is used in dark beers like stouts and porters, mainly for its strong coloring ability. Normally portions 1–2% give a remarkable increase in color without significant change in flavor. By raising the percentage of Black Malt in malt bill the changes in taste can be found quickly. Dosage rates more than 10% are rare.

Amarillo® hops have become super popular with microbrewers. Brewers are describing the flavor and aroma as a supercharged version of Cascade. Premium, Fire-Toasted Oak Cubes from Stavin
Medium + Toast American Oak will impart flavors of campfire, vanilla, roasted coffee and butterscotch.
These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes.
The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional.
Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry.
Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel.

Glass carboys have been a staple of the brewing and winemaking world for generations, but traditional tight neck carboys aren't without their limitations. Standard glass carboys can be difficult to clean after fermentation and require a siphon or racking cane to transfer liquid out. Dosage:
One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2–3 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.

Direct Pitch or Rehydrate:
MONK yeast is designed to be sprinkled directly onto the surface of your wort with no oxygenation required in the initial fermentation. Our aerobic growth process makes this possible by creating dry yeast with high viability and high sterol levels. MONK yeast is pre-loaded with essential nutrients to ensure a successful, complete fermentation. While not required, some brewers prefer to rehydrate yeast. To hydrate yeast, first, sanitize the yeast brick and scissors. Use 10 grams of sterilized tap water between 85-95°F (29-35°C) mixed with 0.25 grams of FermStart per gram of yeast. Sprinkle yeast on the water. Allow the slurry to stand undisturbed for 20 minutes, then swirl. Use small amounts of wort to adjust to within 10°F (6°C) of wort temperature before pitching. Ferment between 62-77°F (16-25°C).

Abbey style beers are known for their high alcohol content and mild estery flavors, and brewing them is best done with a suitable yeast strain. Safale BE-256 (formerly called Abbaye) ferments fast with very high attenuation, contributing subtle, well-balanced aromas. In high-gravity brews, it can produce beers with up to 11% ABV. Or used for lower-alcohol styles, it gives a dry, crisp finish that makes for refreshing session beers or other light styles.
This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.
Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

5.3° L - Briess Malting - Ashburne® Mild can be used as a base malt or high percentage specialty malt. Typical style inclusion would be Mild Ale, Brown Ale, Belgian Ale, and Barley Wine. This stopper has two holes and we use it in the production of our #10 stopper thermowell. It features one 3/8" hole and one 1/4" hole. A racking tube or stainless tube can be inserted into the 1/4" hole with the aid of some lubrifilm, forming an airtight seal, and the 3/8" hole fits an airlock. Even after you wedge all these fittings into it, it still fits a plastic carboy neck! Use this in any configuration you can think of, it'll fit: Airlocks, Thermowells, Racking Canes, and anything else you can imagine!

Slide up and out of the little buckle pieces making sure that the buckle is facing towards you, then strap in and strap down!
